Biltong is a traditional South African snack of dried meat air dried naturally for about 5 to 7 days. Traditionally it was a way to preserve meat by both the indiginous people of South Africa and the European pioneers and salt was the basically the only preservative used. Spices were later added to enhance the flavour. The traditional recipes only call for salt, coriander, pepper and vinegar, which is the recipe we use. There are a multitude of biltong recipes all over the world today, but we decided to keep it the way we believe it should be made and taste.
